Many of the chefs have restaurants in their DNA, established generations back, and there is an enthusiasm on the island for traditional simple cuisine prepared to the highest standards. Nicola Fontolan runs Aqua in Reethi Restaurant, he trained with Locatelli for eight years and his roots are in Northern Italy where his family have always owned bakeries. There is nothing Nicola doesn’t know about pasta and bread, understanding the high pleasures of the ‘staff of life’. His indispensable import would be Bottarga, the dry fish roe that is prevalent in Sardinian homes and crowns Nicola’s pasta dishes.
